Ingredients:
- 4 boneless chicken breasts
- 1/4 tsp salt and black pepper
- 2 Tbsp all-purpose flour
- 2 Tsp dijon mustard
- 1 large egg, lightly beaten
- 1/2 cup dry bread crums
- Parmesan
- 2 tsp pasley
- 2 tsp chives, chopped
- 1 clove garlic
- olive oil
Instructions:
- Preheat oven to 350
- Pound chicken until 1/2 inch thick, sprinkle with salt and pepper
- Place in 3 shallow dishes: flour- eggs, mustard- breadcrumbs, parmesan, parsley, chives and garlic
- Dredge chicken through flour then egg then breadcrumbs
- Heat oil over medium high heat. Add chicken and cook until brown on bottom.
- Flip chicken over and place skillet in oven.
- Bake for 10 minutes.
Spaetzle
Ingredients:
- 2 cups all-purpose flour
- 1 tsp salt
- 2 eggs, slightly beaten
- 1 cup milk
Instructions:
- Bring salted water to a boil.
- Sift together flour and salt.
- Add eggs and milk and beat well.
- Pour batter into colander over boiling water.
- Cook and stir for 5 minutes. Drain.
Season with butter and salt/pepper.
