The slow method:
- Put beans in a large pot
- Fill with water about 3 inches over beans
- Add a dash of salt
- Let sit overnight or about 8 hours
- Rinse and use beans in your recipe
The fast method (fast is relative):
- Put beans in a stock pot
- Fill with water about 3 inches over beans
- Bring to a boil
- Boil for 2 minutes
- Remove from heat and cover pot
- Let sit for one hour
- Rinse and use beans in your recipe
