Dry Beans

Here are two methods for preparing dry beans. This works for any type of bean.

The slow method:
  1. Put beans in a large pot
  2. Fill with water about 3 inches over beans
  3. Add a dash of salt
  4. Let sit overnight or about 8 hours
  5. Rinse and use beans in your recipe

The fast method (fast is relative):
  1. Put beans in a stock pot
  2. Fill with water about 3 inches over beans
  3. Bring to a boil
  4. Boil for 2 minutes
  5. Remove from heat and cover pot
  6. Let sit for one hour
  7. Rinse and use beans in your recipe
